Start your morning with love and appreciation by taking the time to create these delicious and simple Apple & Feijoa spiced pancakes. A recipe from the Aro Ha kitchen which is bound to delight both those looking for a delicious comforting meal and something healthy to start off the day with.⁠

Apple & Feijoa Spiced Pancakes

(Makes 10 Pancakes)

These pancakes are gluten-free, low sugar, nut-free, soy-free and fibre rich.

Ingredients

  • 1 ⅓ cup plant-based milk
  • 1 tsp apple cider vinegar
  • 2 Tbsp chia seed, ground
  • 6 Tbsp water
  • 1 cup buckwheat, ground
  • 2 Tbsp Maple Syrup (or sweetener of choice)
  • 1 Apple, pureed
  • 1 Feijoa, flesh pureed (optional)
  • 1 tsp Vanilla Extract
  • ½ tsp baking soda
  • 1 tsp ground cinnamon, ginger
  • Pinch of nutmeg, cardamom

To Serve

A dollop of coconut yoghurt, fresh or stewed fruit, nut butter, edible flowers and a drizzle of maple syrup.  

Directions

Begin by mixing nut milk with apple cider vinegar in a bowl, and allow to sit while preparing the rest. This creates a type of buttermilk.

Blend chia seeds in a dry blender, mix in a small bowl with water and allow to replicate an egg texture.

Blend buckwheat grouts in a dry blender to form a flour-like consistency.

Add all remaining ingredients to blender until well incorporated, including the chia egg and milk mixture.

Bring a frying pan to medium-low heat, and add a little oil unless using a non-stick pan. Spoon 1/3 cup batter and cook on one side for 4 mins or flip when bibbling and browning. Allow for two minutes on the second side.
