The kind of drink that makes you pause. At first, it’s a sparkling glass with a jewel-toned ice base, a miniature rosemary tree, and tiny floating fruits - an edible snow globe. And then, slowly, as it melts, it releases warmth and spice, citrus brightness, and the gentle crispness of winter herbs into the sparkling water.

Perfect for gathering, reflecting, or simply watching the world turn holiday-gold through your glass.

Ingredients

Produce
  • Blood oranges: 2 (peel of 1, juice of 2)
  • Lemon: 1 (for juice)
  • Fresh ginger: 1 small knob
  • Fresh rosemary: 1 large bunch
  • Frozen fruit: cranberries, blackberries, or pomegranate arils
Pantry
  • Cinnamon stick (or ground)
  • Whole cloves
  • Star anise (optional, for garnish)
  • Sea salt
  • Honey (optional)
Beverage
  • Soda water or sparkling water: 1 liter, chilled

Instructions

1. Make the flavour concentrate

This is the heart of your snow globe, the warming spice, and bright citrus that will slowly infuse your sparkling water.

  • In a small pot, combine 1 cup water, the peel of 1 blood orange, 1 cinnamon stick, 3 whole cloves, 3–4 thin slices of ginger, and a pinch of salt.
  • Bring to a simmer, then reduce heat and steep 8–10 minutes.
  • Stir in 1–2 tsp honey if you prefer a softer sweetness.
  • Strain and cool completely. Once cooled, add 2 tbsp blood orange juice and 1 tbsp lemon juice.

2. Craft the rosemary “trees”

  • Choose 4 sprigs roughly the height of your glasses.
  • Shape the leaves so each sprig has the pointed silhouette of a tiny Christmas tree—this is what will rise from your snow globe as it melts.

3. Freeze the snow-globe base

  • Layer frozen fruit in the bottom of 4 freezer-safe clear glasses.
  • Pour the cooled flavor concentrate over the fruit, just enough to cover the bottom.
  • Stand a shaped rosemary sprig upside down in the center. Use a strip of tape across the glass rim to hold it upright.
  • Freeze at least 2 hours until solid.

4. Serve

  • Pour chilled soda water over the frozen base.

Watch the “snow” melt and the flavours infuse. Sip immediately and let the magic unfold.
